Ingredients – serves 2:

– 1 large chicken breast

– 1 egg

– 2 slices of whole wheat bread

– Pinch of salt and pepper

– 2 tsp garlic powder

– 2 tsp mustard powder

– 2 tsp smoked paprika

– 2 tsp dried thyme

– 2 tsp dried oregeno

– 1 tsp ground ginger

 

1) Put the bread in a food processor and process until it becomes breadcrumbs. Put into a bowl with all the herbs and spices.

2) Cut the chicken breast in half.

3) Beat the egg in a bowl and then dip the chicken in the egg and then put into the bowl with the seasoned breadcrumbs. Stir until the chicken is completely covered and then put on a baking tray and put in a pre-heated oven at 220C/400F for 45 minutes. It may need longer, depending on the size of your chicken pieces.
